Notes
Tetsu Kasuya's award-winning 4:6 Method gives you control over sweetness, acidity, and strength.
**The 4:6 Concept:**
First 40% (pours 1-2) adjusts sweetness vs acidity. Remaining 60% (pours 3-5) adjusts strength.
**Adjusting taste:**
For more sweetness: make pour 1 smaller, pour 2 larger. For more acidity: make pour 1 larger, pour 2 smaller. Keep total of pours 1-2 at 120g.
**Adjusting strength:**
For lighter coffee, use fewer pours in the second phase. For stronger coffee, use more smaller pours.
After brewing, remove the dripper, swirl the coffee and serve.
